Light and fluffy, these pancakes are great on their own. However, sliced bananas, blueberries, chocolate chips, and chopped nuts also pair well with the pancakes.

- 1 tsp Baking Powder
- 1/4 tsp Cinnamon
- 2 Bananas
- 2 Eggs
- 1 tsp Vanilla
DIRECTIONS
- Put all ingredients in a food processor and blend well. Use a 1/8 cup for measuring batter on a griddle prepared with cooking spray. Cook pancakes 2-3 minutes on one side and flip – then cook for another 1-2 minutes.
- In a small bowl mix together stevia (I use Truvia) and cinnamon – you can also use the brown sugar blends.
- I made some for my husband with dark chocolate chips and a dollop of whipped cream! He loved them.
