KETO/LOW CARB SCALLOPED CABBAGE

Ingredients

  • 1 tsp ground mustard
  • 3 oz cream cheese
  • 1 small head of cabbage (about 4-5″ in diameter)
  • salt and pepper
  • 3/4 cup Unsweetened Almond Milk
  • 1/4 cup heavy whipping cream
  • 2 cups shredded cheddar cheese
  • 1 serving of Keto Butter Crackers (optional)

Instructions

  1. Bring a large pot of water to a boil. Meanwhile cut the cabbage into quarters and remove the core. Add 1 tsp of salt to the boiling water, then carefully add the cabbage. Cook until tender, about 10-15 minutes. 
  2. Drain the cabbage and set aside. 
  3. Preheat the oven to 375 degrees and grease a 2 1/2 quart casserole dish with butter or nonstick spray. 
  4. In a saucepan over medium heat, combine the almond milk, heavy cream and cream cheese. Stir frequently until the cream cheese is completely melted. Stir in cheddar cheese, and ground mustard.
